How to Make Hamburger Steaks

If you are learning how to make hamburger steaks decide what type of ground beef you would prefer to use. Choose between seventy five percent to ninety percent lean ground beef. The seventy five percent will have more fat in it. It will be cheaper to buy but will have more shrinkage. On the other hand extra fat adds extra flavor. Their hamburger is also fresher with a much better taste. The “grind” of the beef is also important to me. I prefer the larger coarse grind for steak burgers; finely ground beef is not suitable.

  • 1 Pound ground beef
  • 1/3 Cup milk
  • 2 Tablespoons Burgundy wine
  • 2 Slices bread (Remove crusts and crumble) 1 Beaten egg
  • ½ Teaspoon salt
  • ½ Teaspoon pepper
  • 1 Tablespoon vegetable oil

Brown Sauce

  • 8 Thin slices onion
  • 3 Tablespoons butter Melted)
  • 3 Tablespoons flour
  • 2 Teaspoons beef flavored bouillon granules
  • 2 Cups water
  • ¼ Teaspoon pepper

Combine beef and next 6 ingredients in a bowl.

Mix mixture together well; shape into 4 patties.

In large skillet cook patties in hot oil until browned on both sides.

TO MAKE SAUCE sauté onion in butter in skillet until tender.

DISCARD onion; cook butter over low heat until it begins to brown.

Add flour stirring until smooth; cook and stir 1 minute.

Add the bouillon granules; gradually stir in the water.

Cook and stir over medium heat until thickened and bubbly.

Stir in the pepper; pour over the steak burgers and simmer 5 to 7 minutes.

Serve with noodles or mashed potatoes; serves 4.

  • 1 Pound ground beef
  • 2 slices bacon (Not cooked/ dice)
  • ½ Teaspoon garlic powder
  • 1 Teaspoon minced onion
  • ½ Teaspoon salt
  • 1/8 Teaspoon pepper

Tomato Gravy

  • 2 Tablespoons chopped green pepper
  • 1 Tablespoon chopped onion
  • 1 Can (14 ½ Ounces) diced tomatoes (Not drained)
  • 1-2 Bay leaves
  • 1 Teaspoon sugar
  • ½ Teaspoon celery salt
  • 1/8 Teaspoon salt
  • 1/8 Teaspoon pepper
  • ½ Cup water
  • 2 Tablespoons flour

In bowl combine beef, bacon, garlic, onion, salt and pepper.

Mix and shape into 4 oval patties; brown on both sides in skillet. Over medium heat.

Remove patties to platter and keep warm; drain all but 1 tablespoon of drippings.

Add green pepper and onion to skillet; sauté until tender.

Add tomatoes, bay leaves, sugar, celery, salt and pepper.

Combine flour and water until smooth; stir into the tomato mixture. 

Bring to a boil; stir and cook for 2 minutes; return patties to the gravy.

Reduce heat, cover and simmer for 30 minutes.

Uncover and simmer 10 minutes longer; remove bay leaves.

Serve over cooked spaghetti or lasagna; serves 4.

  • 1 ½ Pounds ground beef
  • 2 Cups cooked rice
  • 1 cup minced onion
  • 2 Cloves minced garlic

  • 8 Slices raw bacon

Mushroom Sauce

  • 1 Can cream of mushroom soup
  • ¼ cup milk

  • 1/3 cup fine bread crumbs
  • 2 Teaspoons minced onion

Combine beef, milk, breadcrumbs, onion, salt and pepper in bowl.

Shape mixture into 4 patties; place on a piece of wax paper.

Invert onto broiler rack removing piece of wax paper.

Turn patties over with spatula; spread lightly with butter.

  • Shortening for browning
  • 1 Envelope onion soup mix
  • 1 Can cream of mushroom soup
  • ½ Can water
  • Flour to coat steak burgers

Melt shortening in large skillet over medium heat.

Brown patties on both sides (Takes about 15 to 20 minutes).

Drain off excess grease; sprinkle patties with onion soup mix.

Mix water with can of soup and pour over top; simmer until done.

  • ½ Cup bread crumbs

  • 1 Beaten egg

  • 1 Teaspoon Worcestershire sauce
  • ½ Teaspoon prepared mustard
  • ¼ Cup water
  • 1 Tablespoon flour

Mix 1/3 CUP of the soup, crumbs, egg, salt, pepper and ground beef.

Remove patties to warm platter; drain fat.

Pour remaining soup into skillet; add ketchup, Worcestershire and mustard.

  • 2 Cups beef broth
  • Salt/ pepper to taste

  • 2 Tablespoons flour
  • ¼ cup water

Preheat oven to 350F degrees.

Combine ground beef, bread crumbs, milk and onion; mix well.

Shape into 4 patties; brown on both sides in a skillet.

Place patties in shallow baking pan.

Add beef broth to the skillet; heat to a boil stirring bottom.

  • 2 Green onions (Green and white parts sliced)
  • ¼ Cup seasoned bread crumbs
  • 1 Tablespoon prepared mustard
  • 1 ½ Pounds ground beef
  • 1 Jar (12 Ounces) beef gravy
  • ½ Cup water
  • 3 Teaspoons prepared horseradish
  • ½ Pounds fresh mushrooms (Sliced)

In a bowl beat egg; stir in onion, crumbs and mustard.

Add beef and mix well; shape into 4 patties (1/2 inch thick).

Place in ungreased skillet; cook 4 to 5 minutes on each side.

Drain drippings from skillet; leave patties in skillet.
